#0004 Frank's Chicken with Tarragon Gravy (3/06/07)

Frank's Chicken with Tarragon Gravy


4 chicken breast tenders (about 6 oz total)
1 small onion (chopped)
2 tbsp bell pepper, chopped
1/2 cp milk
1/2 tsp dried tarragon
2 tbsp extra virgin olive oil
Salt & pepper to taste

Instructions:

1 - Saute' onion and bell pepper until onions are translucent then remove and set aside.
2 - Dredge chicken tenders in mixture of flour, tarragon and
salt and pepper.
3 - Saute chicken tenders until cooked through. (about 2 minutes/side),
then remove and set aside.
4 - Return onions and peppers to the skillet, then slowly add milk
and continue stirring until thickened. More milk may be added if the
gravy gets too thick.
5 - Add chicken tenders back, and simmer until heated through, then serve.

Comment -This chicken with gravy is good served over cooked
brown rice, or baked or mashed potatoes.
