#0017 Frank's Cheesey Chicken Breast Pinwheels (01/07/01)

Frank's Cheesey Chicken Breast Pinwheels

1 large chicken skinless, boneless breast half pounded to 1/8" thick
2 tsp peach jelly or jam
2 thin slices of boiled ham
4 tbsp parmesan cheese


1 - Cut chicken breast crossways into 2 equal pieces
2 - Spread the peach jelly evenly on each piece
3 - Cover with the ham slices then sprinkle with 1/2 the parmesan cheese
4 - Roll each piece upike a jelly roll, then cut vertical slices to make pinwheels.
5 - Lay the pinwheels out on greased baking sheet.
6 - Sprinkle with rest of the parmesan cheese.
7 - Bake for 25 minutes in a preheated 400 degree oven.

Comment - Other fruit jellies may be substitute to vary the flavor.
