Frank's Fish Potato Onion Pepper Bake

2 fish fillets (whiting or similar)
zest from 1 orange
1 tsp oregano
1 tsp salt
1/4 tsp black pepper
5 tbsp olive oil
1 bell pepper, seeded and cut into 1/2" wide strips
1 large potato, peeled and sliced thin
1 large yellow onion, peeled and sliced thin


1 - preheat oven to 425 degrees. 2 - Add 3 tbsp olive oil to 9X13 glass baking dish.
3 - Add potato, onion, and bell pepper.
4 - Mix oregano, orange zest, salt & pepper and add 1/2 the mixture.
5 - Toss all to coat the vegetables with oil and spices.
6 - Bake for 25 minutes, stirring halfway through the time.
7 - Lay fish on top, sprinkle with the remaining spice mix and 2 tbsp oilve oil.
8 - Bake another 7 minutes, or until fish flakes easily.

Comment - Another 'comfort food' dish and it's always delicious!
