Frank's Chicken Breast Geneva Nuggets

2 tblsp olive oil
6 chicken breast tenders (about 6 oz)
1 medium carrot cut into matchsticks
1 rib of celery cut into matchsticks
1 medium yellow onion, chopped
2 thin slices of boiled ham
1/2 cp flour
1/2 cp water
2 slices of swiss cheese

Instructions:

1 - In a skillet saute' carrot, celery, onion and ham over medium heat until crispy done.
2 - Remove from skillet and set aside.
3 - In same skillet brown the chicken breast tenders until white (1-2 minutes/side).
4 - Place chicken tenders on baking sheet & spread saute'd vegetables over each.
5 - Put under broiler for about a minute to melt the cheese.
6 - Mix the flour into the water to make a batter and pour batter over each cheese covered chicken tender. 7 - Bake in a 350 degree preheated oven for 10-15 minutes or until golden.

Comment - This variation on the traditional chicken breast Geneva recipe makes tasty little nuggets (or fritters if you prefer the term). No matter what you call them they taste great!
