Frank's Fish and Veggie Bake

3 whiting fillets (thawed)
zest from one orange
1 celery rib(cut into matchsticks)
1 medium carrot(cut into matchsticks)
1 medium onion, chopped
1 tsp oregano
1 tsp salt
1/4 tsp black pepper
5 tbsp olive oil
3 slices of Swiss cheese


1 -Saute' celery, onion, and carrot in 3 tbsp of olive oil.
2 - Remove and set aside.
3 - Place fish fillets skin side down in greased baking dish.
4 - Spread the saute's veggies on top, then sprikle oregano, salt and pepper on top
5 - Drizzle the remaining olive oil on top.
6 - Bake in a preheated 450 degree oven for 5-7 minutes or until fish flakes easily.
7 - Place a cheese slice over each fillet and return to oven to melt the cheese, then serve.

Comment - A very tasty takeoff on a chicken breasts Geneva recipe, using fish instead.
