#0043 Frank's Qiuck Chicken Piccata (05/04/07)
Frank's Quick Chicken Piccata
1 tbsp butter
4 chicken tenders (about 4 oz. total)
2 tbsp lemon juice
1/4 cp water
salt and pepper to taste
1 small onion, chopped
2 cloves garlic, minced
2 tbsp olive oil
1 - Saute' onion in olive oil in a skillet until translucent.
2 - Add garlic and saute' 1 minute longer, then remove onion and garlic and set aside.
3 - Season the chicken tenders on both sides with salt and pepper.
4 - Melt butter and saute' chicken tenders in same skillet.
5 - Add back the onion and garlic then deglaze the skillet with water and lemon juice.
6 - Continue heating until liquid thickens a little bit.
Comment - This tastes great over cooked brown rice.
