Frank's Chicken Thighs with Vegetable Gravy
2 boneless, skinless chicken thighs
2 tbsp olive oil
1 small carrot, diced fine
1 stalk of celery, diced fine
1 small onion, sliced thick
1 beef bullion cube
salt & pepper to taste
1 tsp lime juice
1 cp water
1 - Heat the olive oil in a skillet & saute' the vegetables on medium heat
until starting to brown.

2 - Remove & set aside, then saute' the salt & pepper seasoned chicken.
3 - add the bullion cube and lime juice to the water and use to deglaze the pan.
4 - Add the vegetables back and reduce until sauce thickens, then serve.
