Caramelized nion Lime Chicken Caramelized Onion Lime Chicken (12/19/08)


2 , skinless, boneless chicken tenders(about 3 oz)
1 medium onion (cut in half then sliced)
2 tbsp olive oil
1 lime zested, then juiced
1/4 cp caramelized onions(recipe below)
Salt and freshly ground back pepper


1 - Caramelize the onion (takes about 30 minutes)
2 - Deglaze the skillet with the juice of 1 lime, then add the zest.
3 - Pour the mixture into a food processor or blender and puree'.
4 - Season the 2 chicken tenders, then place in the bottom of the same skillet.
5 - Spoon the puree' made above evenly over the chicken tenders.
6 - Place in a 350 degree preheated oven for 15 minutes or until chicken is tender.
Serve immediately!

Caramelized Onions

1 - Peel 1 medium yellow onion, cut off ends, then cut in half
top to bottom. Slice thinly (1/8" thick) and separate all the strips.
2 - Heat a non-stick skillet and add 2 tbsp olive oil. When very
hot but not smoking, add the onions then turn down to medium heat
and stir to coat all the onion.
3 - Continue to cook for 20 - 30 minutes, stirring frequently to
avoid burning the onions.
4 - When the caramelized onions are done they should be golden brown.
