Frank's Corned Beef and Chicken Crockpot Dinner
(1) 12 oz. can corned beef
2 chicken thighs (skinned and boned and chopped into bite size pieces
2 tbsp olive oil
2 tbsp flour
1 can cream of mushroom soup
4 medium potatoes, scrubbed and diced with skins on)
1 medium onion, chopped
2 medium carrots cut into bite size pieces
2 stalks celery cut into bite size pieces
1 bay leaf
salt and pepper to taste
1 - Combine the peppre and salt with the flour and dredge the chicken thighs in it.
2 - Saute' the onion in olive oil in a skillet, then remove the onion to the crock pot.
3 - In the same skillet brown the chicken thigh meat pieces.
4 - Put the thigh meat and the other ingreients into the crock pot.
5 - Cook on high for 4 - 5 hours.
