Cut peeled hard-cooked egg in half lenthwise. Place halves on crisp
lettuce on small salad plate. Spoon Russian dressing on halves. Add dab
of black caviar as garnish. Makes 1 serving. Eggs, dressing and caviar
must be cold.
Russian Anchovy Eggs: Substitute curled anchovy fillet for caviar in
Russian Smoked Salmon eggs: Place rounds or strips of smoked salmon
on thin buttered toast. Slice hard-cooked egg on salmon. Top with dab
of sour cream flavored with mustard or with sour cream mixed with
finely chopped cucumber. Add quick grind of black pepper to top.
