Goulash with Noodles

1/4 lb salt pork
1 1/2 lns round steak, cut in 2-inch pieces
1 tbsp flour
1 tsp salt
1/2 tsp pepper
1 clove garlic, mashed
1/2 cp finely cut peeled onion
1 cp condensed beef bouillon
1 (8 oz.) can tomato sauce
1 tbsp paprika
1 (6 oz. package noodles
1 - Dice salt pork.
2 - Heat in heavy skillet over low heat until cooked.
3 - Remove salt pork and save.
4 - Sprinkle steak with flour, salt, and pepper.
5 - Brown on all sides in salt pork.
6 - Add garlic, onion, bouillon, and tomato sauce, and mix.
7 - Stir in salt, peppercorns, and paprika.
8 - Cover pan.
9 - Cook over low heat about 30 minutes.
10 - Remove garlic and discard it.
11 - Continue cooking 1 hour.
12 - Add m0re liquid from time to time if necessary.
13 - Sprinkle cooked diced pork on top.
14 - Serve on a bed of hot noodles.

My friend Harry Elmlark, loves to serve beef goulash with noodles
at the big buffet suppers the Elmlarks give in Westport.
table. He serves it with mixed green salad, garlic bread, mqacedoine of
fruit, perhaps with kirschwasser in it. a nice burgundy goes well with
it, or mugs of cold beer.
