Pork Chops, Polish Housewife Style

4 loin pork chops
3 tbsp finely cut peeled onion
1 (6 ounce) can tomato sauce
1/2 cp commercial sour cream
1 dill pickle, cut fine
1/4 cp dry sherry
1 tsp salt
1/4 tsp pepper
Beet Salad (recipe to follow) as garnish
1 - Brown chops on both sides in heavy skillet over high heat.
2 - Reduce heat.
3 - Cover.
4 - Cook slowly about 25 minutesor until chops are almost done.
5 - Add onion.
6 - Cover and continue cooking 10 minutes.
7 - Add tomato sauce, sour cream, pickle, sherry, and seasonings.
8 - Stir in pan and spoon over chops until very hot.
9 - Serve on warmed plater.
10 - Garnish with small picklle beet salads on lettuce leaf.
Makes 4 servings.
