Meat Loaf, Italian Style

2 slices Italian whole wheat bread
2 slices, Italian white bread
1 cp water
4 sprigs parsley
1 lb lean ground beef
3 tbsp grated Parmesan or Gruyere cheese
1 tsp salt
1/4 tsp pepper
2 tbsp butter or margerine
1 (8 oz. can) tomato sauce
1 tsp oregano
1 - Start oven at moderate (375 degrees F.).
2 - Oil shallow baking pan.
3 - Crumble bread in mixing bowl.
4 - Pour water over and let soak few minutes.
5 - Peel and chop onion.
6 - Cut parelsy fine.
7 - Mash soaked bread with fork.
8 - Combine beef, onion, parsley, and cheese in mixing bowl.
9 - Mix with fork, lightly and evenly.
10 - Add egg, salt, and pepper.
11 - Mix.
12 - Shape into loaf in prepared pan.
13 - Add dabs of butter along top of loaf.
14 -Bake 30 minutes.
15 - Pour tomato sauce over loaf and sprinkle with oregano.
16 - Bake 20 minutes longer.
17 - Serve hot or cold.
Makes 6 or more servings.
