Green Noodles, Parmesan
Source: Vintage Recipes from Amy Vanderbilt's Complete Cookbook (c. 1961)
1/2 lb green noodles
1/4 lb ham, diced
1/4 cp olive oil
1/4 cp grated Parmesan cheese
freshly ground pepper
1 - Cook noodles according to directions on package or follow "Green Noodles with Italian Meat Suace" recipe.
2 - Saute ham in hot oil until ham is lightly browned.
3 - Pour ham and oil over drained noodles.
4 - Mix lightly.
5 - Sprinkle with Parmesan cheese and a little pepper
6 - Serve at once.
Makes 4 servings
Butter or margerine may be used in place of oil. Freshly cut parsley
or basil sprinkled on top adds a good flavor variation.
