1 tsp unflavored gelatin
1/4 cp cold water
1/2 cp mayonnaise
2 cps cleaned cooked crab meat
1 cp thinly sliced celery
1 tbsp finely cut parsley
1 tbsp finely cut chives
1/2 tsp finely cut tarragon
4 deviled eggs
8 small, cleaned cooked shrimp dipped in Russian dressing
1 - Soften gelatin in water 5 minutes.
2 - Set saucepan over hot water and let gelatin dissolve.
3 - Let cool.
4 - Combine with mayonnaise.
5 - Combine crab meat, celery, parsley, chives, and tarragon.
6 - Mix with gelatin-mayonnaise.
7 - Pour into an oiled 1-quart mold.
8 - Chill several hours.
9 - To serve, unmold on crisp greens.
10 - Garnish with quartered deviled eggs and small shrimp dipped in Russian dressing.
Makes 6 servings.
Sea-Food Molds: Other cooked sea food may be substituted for crab
in the above recipe. Especially good made with lobster. If shrimp are
used, grind the deveined cooked shrimp. Add 1 or 2 cooked oysters
