Watch-Hill Salad Dressing
Source: Vintage Recipes from Amy Vanderbilt's Complete Cookbook (c. 1961)
1/2 tsp salt
1/4 tsp sugar
1/2 tsp dry mustard
3 tbsp tarragon vinegar
1 tsp grated peeled onions
1/2 tsp finely cut parsley
1 clove garlic, peeled and mashed
1/2 cp plus 1 tbsp olive oil
1 - Mix salt, sugar, and mustard into smooth paste with vinegar.
2 - Add onion, parsley, and garlic.
3 - Let stand 1 hour.
4 - Discard garlic.
5 - Add olive oil slowly, stirring and beating constantly until thickened.
Makes about 1 1/4 cp dressing.
Use just enough dressing to coat each piece of salad lightly, without
leaving any surplus dressing in bottom of bowl.
