2/3 cp mashed or sieved avocado
1/2 tsp salt
1 tbsp lemon juice
1/4 tsp Tabasco sauce
3 tbsp mayonnaise
1 tbsp finely cut chives or parsley
1 - Combine avocado with salt, lemon juice, and Tabasco.
2 - Beat in mayonnaise
3 - Add parsley or chives.
4 - If too thick, add either more mayonnaise or a little sour cream.
Makes about 1 cp dressing.
This is a California favorite for sliced tomatoes and cucumbers
as well as citrus-fruit salads. It is delicious on chilled, cooke shrimp, too.
