Cucumber Sauce for Chicken

1 tsp prepared mustard
1 tsp tarragon vinegar
1/4 cp drained prepared horseradish
1 tsp confectioners' sugar
1/2 large cucumber, pared and finely diced.
1 cp heavy cream, whipped
1 - Combine seasonings with cucumber.
2 - Fold into cold whipped cream.
Makes 4 to 6 servings.
Serve on hot broiled chicken halves.
Equally good on broiled salmon steaks. It is an unforgettable com-
bination with hot baked stuffed oysters.
