Scrub and rinse potatoes. Pare. Cut into strips about 3/8 inch thick.
Dry between paper towels. Fry in deep hot oil at 375 degrees F. on
frying thermometer until light brown. Drain on paper towels in shallow
pan in hot oven with door left open. Sprinkle potatoes lightly with salt.
Serve hot. In estimating servings, allow 1 large potato or 2 smaller
ones per serving.
