8 medium potatoes, pared and sliced
1/4 cp finelyncut green pepper
1/4 cp minced onion
1 3/4 cps medium white sauce
2 tsp salt
1/4 tsp pepper
1 - Start oven at moderate (350 degrees F.)
2 - Make alternate layers of potatoes, green pepper, and onion in prepared baking dish.
3 - Combine sauce and seasoning.
4 - Pour over potatoes.
5 - Cover dish.
6 - Bake about 1 hour.
7 - Uncover and continue baking 30 minutes, until top has browned.
Makes 8 servings.
The old fashioned version of this dish is made without green
peppers and onion. The well-seasoned sauce is poured overr potatoes,
and additional seasoning added to potatoes if needed. Bakes as de-
scribed in recipe. Top should have areas of brown where sauce is
