To bake, brown, or mash sweet potatoes follow recipes for white
Also, cut sweet potatoes in julienne strips or a little larger and fry
in deep hot fat at 365 degrees F. on frying thermometer until golden brown
and crisp. Drain as described for French-Fried potatoes.
Sprinkle lightly with salt while still hot.
For seasoning mashed sweet potatoes, add few chopped walnuts sauteed
in little butter, or add sprinkling of powdered nutmeg or cinnamon, or
add a little crushed pineapple. Decide on which seasoning in relation
to other foods on the menu.
