Old Charleston Shrimp and Corn Casserole
2 cps canned or fresh corn kernels, drained
2 eggs, separated
1 tbsp butter, melted
1/2 cp milk
1 cp peeled cleaned raw shrimp
salt and pepper to taste
1 - Combine corn, egg yolks, butter, milk, shrimp, salt and pepper to taste.
2 - Stir to blend well.
3 - Beat egg whites until stiff, fold them into the first mixture, then transfer to small buttered casserole.
4 - Bake until pie is set.
5 - A delightfully quick one-dish meal.
