1 large chicken breast, halved and boned
1 tbsp butter or margerine
1/3 cp apricot preserves (or use pineapple, peach or whatever you have)
1 1/2 tbps lemon juice
1 tsp lemon pepper marinade
slivered almonds or toasted sesame seeds
1 - Arrange chicken in shallow pan and dot wsith butter.
2 - In saucepan combine apricot preserves, lemon juice, and lemon pepper marinade.
3 - Blend well.
4 - Heat until preserves melt and mixture is thoroughly blended.
5 - Pour apricot sauce over chicken and sprinkle almonds on top.
6 - Bake in 350 degree oven, uncovered, for 35 minutes or until done, basting occasionally.
7 - If necessary, cover with foil to prevent excessive browning.
8 - Serve over rice.
