Stuffed Fish Beachcomber
1 whole fish (about 2 1/2 to 3 lbs)
2 tbsp margerine
6 tbsp diced onions
1/4 cp sliced mushrooms
3 tbsp vinegar
1 1/2 cps day old bread crumbs
1/2 cp skim milk
1 egg white, slightly beaten
freshly ground black pepper
1/2 tbsp curry powder
2 tbsp chopped pickle or relish
1 - Saute' onions and mushrooms in margeine 10 minutes.
2 - Add vinegar and simmer 10 minutes.
3 - Remove from heat and cool 10 minutes.
4 - Soak bread crumbs in skim milk, then squeeze out excess milk and add crumbs to onion mixture.
5 - Add beaten egg white, pepper and pickles or relish mixed with curry powder.
6 - Sprikle fish on all sides with pepper.
7 - Stuff with bread mixture, close opening with skewers or picks.
8 - Grease a baking dish or line it with unglazed parchment paper,place fish in it, standing up if possible.
9 - Brush with oil and bake at 375 degrees F. for 45 minutes or until fish flakes easily when tested with a fork.
