Super Tuna Salad Sandwiches
6 1/2 or 7 oz can tuna fish, drained and flaked.
1 cp cottage cheese
2 hard cooked eggs, chopped
1 large tomato, chopped
1/4 cp chopped celery
2 green onions, sliced
1/2 cp (2 oz) natural cheddar cheese
1/3 cp mayonnaise or salad dressing
1 tsp lemon pepper marinade
1/4 tsp salt
16 slices whole-graim bread, toasted and buttered
fresh alfalfa sprouts
1 - In mixing bowl, combine tuna, cottage cheese, eggs, tomato, celery, sliced onion, and cheddar cheese.
2 - Stir together mayonnaise, lemon pepper marinade, and salt; fold into tuna mixture.
3 - Cover and chill.
4 - Spread about 1/3 to 1/2 cp tuna mixture on half the toast; top each with alfalfa sprouts and another slice of toast.
Makes 8 sandwiches
