5 tbsp butter
2 medium onions, chopped fine
28 oz can plum tomatoes
4 tbsp tomato paste
4 large cloves garlic, chopped fine
1 cp chopped celery
1/4 cp chopped parsley
1/2 tsp dried thyme
1/4 tsp ground cloves
salt, pepper, and Tabasco to taste
2 1/2 lbs shrimp, shelled and deveined
1 1/4 cps cooked long grain rice
1 - In a Duc=tch oven, heat the butter and saute' onion until tender.
2 - Add all ingredients except ham, shrimp, and rice.
3 - Break up the tomatoes with a wooden spoon.
4 - Stir well, then simmer 25 minutes.
5 - Add ham and simmer another 5 minutes.
6 - Add the shrimp, 2 1/2 cps water and rice.
7 - Simmef 12 to 15 minutes or until rice is tender and the liquid is absorbed.
8 - Serve extra Tabasco on the side.
