Fillets with a Coat of Tan
1 1/2 lbs haddock fillets (or any firm, mild, fresh fish fillet)
1 tbsp butter or margerine
1/2 cp fresh bread crumbs
1/2 cp Parmesan cheese
1/2 tsp tarragon
1/2 tsp garlic salt
1/4 tsp dry mustard
1/2 cp mayonnaise (not salad dressing)
1 - Rinse fillets, pat dry.
2 - Melt butter in shallow baking dish.
3 -Mix crumbs, cheese and rest of dry ingredients.
4 - Spread mayonnaise on one side of fillet.
5 - Roll coated side in crumb mixture.
6 - Repeat on other side.
7 - Arrange fish in a single layer in baking dish.
8 - Turn over to coat with melted butter.
9 - Sprinkle remaining crumbs on top.
10 - Bake at 425 degrees 10 minutes for each 1 inch thickness of fillets,
or until fish flakes easily with a fork.
11 - Garnish with lemon wedges and parsley.
