2 recipes Brown Sauce, recipe follows
1/4 cp butter or margerine
4 cps sliced onions
3 cloves garlic, minced
3 lbs boned round or chuck cut in 1 inch cubes
1 (8 oz can) whole tomatoes, drained, cut in pieces
4 tsp paprika
1/2 tsp salt
1/2 tsp dried leaf marjoram
1 bay leaf
1 - Make Brown SAauce Base.
2 - In large saucepan or Dutch oven melt butter; add onions and garlic and cook until lightly browned.
3 - Add beef, brown on all sides.
4 - Stir in tomatoes, Brown Sauce Base, paprika, salt, marjoram and bay leaf.
5 - Coverr, simmer 1 1/2 to 2 hours, stirring occasionally until meat is tender.
6 - Serve over noodles, spaetzle, mashed potatoes or rice.
7 - If desired, serve with additional Tabasco sauce.
Makes 6 to 8 servings.
Brown Sauce Base
2 tbsp butter
2 tbsp flour
1 cup canned beef broth or 1 beef bouillon cube dissolved in 1 cp water
1/4 tsp Tabasco sauce
1 - Melt butter in saucepan and cook until golden brown.
2 - Blend in flour and cook over low heat, stirring constantly, until dark brown.
3 - Stir in broth and Tabasco.
4 - Cook, stirring constantly, until sauce thickens and comes to a boil.
Makes 1 cup
