Roasted Beef Hash
1 1.2 cps diced, cooked, trimmed roast beef
1/2 cp diced onion
1/2 cp diced cooked potato
Dash Worcestershire sauce
Dash hot pepper sauce
Seasoned salt and pepper
3/4 cp au jus gravy
2 eggs, poached or fried
1 - Brown beef, onion, and potato in butter.
2 - Season to taste, using Worcestershire sauce, hot pepper sauce, seasoned salt and pepper.
3 - Place in 1-quart baking dish and pour 3/4 cp au jus gravy over hash.
4 - Bake in 350 degree oven about 45 minutes or until liquid is absorbed.
5 - After 20 minutes, stir once.
6 - Do not stir during last 20 minutes.
7 - Remove from oven and pour off excess fat.
8 - To serve, top each portion with poached or fried egg.
