Short Ribs of Beef
3 lbs short ribs
salt, freshly ground pepper, rosemary
flour for dredging
potatoes, onions, carrots, celery
1 - Rub shortribs with garlic clove and season with salt6 and pepper.
2 - Dredge in flour, shaking off all excess.
3 - Brown well in cooking oil.
4 - Place short ribs in roasting pan.
5 - Add a cup of water or beef broth.
6 - Season with rosemary.
7 - Roast shortribs in 350 degree oven for 2 1/2 hours or until the meat is coming away from the bones.
8 - Add vegetables 45 minutes before the shortribs are done.
