2 medium zucchini, peeled and cut to 1/2-inch dice
1 large onion, peeled and thinly sliced
1 medium sweet green pepper, seeded, trimmed and chopped
1/4 cp olive oil
3 large tomatoes, peeled, seeded and cut in eighths
2 colves garlic, peeled
salt and pepper to taste
3 tbsp grated Parmesan cheese
1 - Preheat oven to 450 degrees.
2 - In a skillet, saute' the zucchini for 5 minutes in 2 tbsp oil.
3 - Remove with a slotted spoon and transfer to an ovenproof casserole.
4 - Add the remaining oil to the skillet and nsaute' the onion and green pepper until the onion is lightly browned.
5 - Add the tomatoes, garlic, salt and pepper and simmer for 15 minutes.
6 - Discard the garlic, pour the tomato mixture over the squash and bake until the zucchini is tender.
7 - Sprinkle with Parmesan cheese and bake for 10 minutes until lightly browned.
8 - Serve hot.
