Tamale Meat Loaf
1 lb lean ground beef
2 onions, diced
1 clove garlic
3 tbsp butter or oil
1/2 cp chili sauce
2 1/2 cps cream-style corn
1 1/4 cps corn meal
1 cp milk
3 eggs, beaten
1 tbsp salt, if used
1 tbsp Angostara bitters
1 - Cook meat, onion, and garlic in btter until meat is lightly browned.
2 - Remove garlic
3 - Add chili sauce, corn, and bring to a boil.
4 - Remove from the heat.
5 - Stir in corn meal and milk.
6 - Add to beaten eggs, salt, if used, and bitters.
7 - Mix thoroughly and spoon into greased loaf pan.
8 - Pat down carefully to eliminate air bubbles and to smooth top.
9 - Bake at 375 degrees for 45 minutes.
10 - Garnish top with pimiento strips.
