Hearty Ham Soup
1/4 cp butter
1/4 cp chopped onion
2 cps diced raw potato
1/4 cp water
1/4 cp all purpose flour
1/2 tsp salt
1/4 tsp marjoram
1/8 tsp pepper
1/8 tsp celery salt
3 cps milk
1 pkg (10 oz) frozen peas, thawed
1 1/2 cps (1/2 lb) diced cooked ham wedge of blue cheese
1 - Melt butter in a heavy 2-quart saucepan with cover.
2 - Add onion, potato and water.
3 - Cover, bring to boiling, lower heat to simmer and cook until potato is tender, about 15 minutes.
4 - Stir in flour and seasonings.
5 - Add milk, slowly.
6 - Cook until thickened, stirring constantly.
7 - Stir in peas and ham; simmer about 5 minutes or until peas are cooked.
8 - Serve with a wedge of blue cheese crumbled over soup, if desired.
Yield: 6 cups
