3 lbs boneless beef chuck, cut into 1-inch cubes
salt, pepper, flour
6 strips bacon, chopped
3 tbsp butter or margerine
3 large onions, sliced
1/3 cp liquid brown sugar
1/3 cp cider vinegar
2 tbsp prepared mustard
1/2 tsp thyme
1/2 tsp ground bay leaves
2 cans (12 oz each) beer
1 - Sprinkle beef cubes with salt and pepper.
2 - Roll in flour.
3 - In a Dutch oven or large heavy skillet, fry bacon until crisp.
4 - Remove from pan.
5 - Add butter to bacon drippings.
6 - Add beef and brown on all sides.
7 - Add remaining ingredients, cover, and simmer for 1 to 1 1/2 hours or until beef is tender.
8 - Season to taste with salt and pepper and serve sprinkled with crisp bacon.
9 - Serve with new potatoes and dark bread slices.
