1/4 cp olive oil
1 large onion, sliced (1 cp)
1 clove garlic, minced
2 large all purpose potatoes, pared, cut in 1/2-inch cubes
2 large tomatoes, peeled, seeded, cut in large chunks
2 large bell peppers, halved, seeded, (mixed colors) cut in strips
3/4 tsp salt
1/2 tsp dried leaf oregano, crumbled
1/4 tsp dried leaf thyme, crumbled
1 - In a large skillet heat oil over medium heat; saute'n onion and garlic until oinion is limp.
2 - Stir in potatoes, cover, cook 10 minutes, stirring occasionally.
3 - Stir in remaining ingredients; cover, cook 10 minutes longer, until potatoes are cooked and peppers are crisp tender.
4 - Makes 4 side dish servings at about 222 calories per serving
