Steamed Leeks au Gratin
12 medium leeks
1 tbsp salt for steam liquid
1 cp heavy cream
salt and pepper
6 t5bsp grated Parmesan cheese
3/4 cp dry bread crumbs
3 tbsp butter
2 tbsp finely chopped parsley
1 - Clean leeks, trim off bottoms, and split length-wise.
2 - Tie enough leeks for one serving in a bundle and steam for 7 minutes.
3 - Place leeks in an oven-proof serving dish, cover with cream, salt and pepper, breadcrumbs, bits of butter and grated cheese
4 - Put under broiler for 1 minute to melt cheese and brown topping.
5 - Dust with finely ground parsley.
