Southern Vegetable Ring with Okra-Tomato Sauce
3 cps boiling water
1 pkg (6 oz hash brown potatoes with oniuons
1 pkg (10 oz) frozen chopped mustard greens
2 tbsp butter or margerine
1 1/2 tsp salt
1/8 tsp pepper
1/2 cp dairy sour cream
1/4 cp grated sharp cheddar cheese
1 - Add boiling water to potatoes; let stand at least 1 hour; drain.
2 - Meanwhile, cook mustard greens according to package directions; drain.
3 - Combine potatoes and mustard greens with the remaining ingredients; mix well.
4 - Pack firmly into opiled 5 cup ring mold.
5 - Bake at 350 degrees for 40 minutes.
6 - While ring m,old is baking, perpare sauce.
7 - When mold is done, turn out on serving plate; mfill center with sauce
Serves 4 or 5
1 pokg (10 oz frozen sliced Okra
1 can (1 lb) stewed tomatoes
1 cp well seasoned white sauce
1 - Cook okra according to package directions; drain.
2 - Combine tomatoes and white sauce; cook and stir over moderate heat until thickened.
3 - Stir in drained okrta; heat to serving temperature.
