Sweet Potato Tzimmes
2 lbs sweet potatoes, cooked and peeled, or 2 cans (16 oz each) sweet potatoes in heavy syrup, drained
2 large apples, pared, cored and cut into 1/4-inch slices
1/2 cp dark seedless rasisins
1/4 cp coarsely chopped walnuts
1/2 cp honey
1/4 cp margerine
1 tsp grated orange peel
1/2 tsp salt
1/8 tsp ground cinnamon
1/8 tsp ground ginger
1 - Cut sweet potatoes into 1/4-inch slices.
2 - Layer in lightly greased 1 1/2-quart casserole with apple slices, raisins, and walnuts.
3 - Combine honey, margerine, orange peel, salt, cinnamon and ginger in saucepan.
4 - Heat, stirring until margerine is melted and mixture is well blended.
5 - Pour over layered sweet potatoes and fruits.
6 - Bake uncovered in 350 degree oven, about 1 hour, basting occasionally.
