Curried Potatoes and Apples
4 medium size potatoes, cooked
3 medium apples, pared and cored
2 tbsp butter or margerine
1 cp chopped onion
1 tsp ground ginger
1 clove garli, minced
1 tomato, peeled
1 1/2 tbsp curry powder
1 trsp salt
1 cp hot water
1 tbsp chopped parsley,m optional
1 - Cook potatoes.
2 - Cool and peel.
3 - Cut into large chunks
4 - Cut apples into eighths
5 - Melt butter or margerine in large skillet.
6 - Add onions and saute' until golden.
7 - Add ginger, curry powder and tomatoes.
8 - Cook 1 minute.
9 - Stir in apples,potatoes and salt.
10 - Add the water.
11 - Mix well.
12. Heat to boiling.
13 - Reduce heat and simmer 4 to 5 minutes, stirring occasionally.
14 - Sprinkle with parsley.
Yield: 6 servings
The dish made ahead allows flavors to blend and absorb each other.
Reheat to serve. For more exotic flavor, 1 tbsp chopped ginger root can
be used in place of powdered ginger.
