Creamed Poached Eggs
1 cp milk
1 cp shredded cheese
1 tbsp butter
1 tbsp chopped onion
1 tbsp flour
1/2 cp sour cream
1/4 cp stuffed olives, sliced
4 english muffins, toasted, split and buttered
1 - In skillet, combine milk, cheese, butter, & onion.
2 - Heat and stir until cheese is meltedStir flour into sour cream and stir in about half the hot cheese mixture.
3 - Return to skillet.
4 - Cook and stir till thickened and bubbly.
5 - Cook and stir 1 - 2 minutes more.
6 - Stir in olives. Carefully add eggs.
7 - Cover, cook over low heat 3 to 5 minutes.
8 - Serve on muffins.
