2 cps cooked chicken, cut in chunks
1/2 cp diced celery
1/2 cp diced apple
2 green onions,sliced
2 tbsp shelled walnuts
1/3 cp mayonnaise
3 tbsp yogurt
1 tbsp mustard
1 tsp freshly chopped parsley
1 cantaloupe, cut in half and seeded
1 - Pull chicken from carcass and cut into large chunks.
2 - Combine in bowl with celery, apple, green onions, walnuts.
3 - Add next four ingredients; stir to combine.
4 - Line cantaloupe halves with small lettuce or mustard leaves; heap chicken salad in centers.
5 - Refrigerate any remaining salad for a sandwich.
Makes 2 servings.
