Pilaf With Almonds
1 can (10 3/4 oz) condensed chicken broth
1 cp cracked wheat
1/2 tps salt
1/4 tsp mint flakes
1/2 tsp grated lemon peel
1/2cp whole natural (unbleanched) almonds
3 tbsp margerine or butter
1/2 cp sliced green onion
1/2 cp seedless raisins
2 tnsp choppedparsley
1 tbsp lcmon juice
1cp diced cooked chicken, turkey, or lamb
1 - Pour broth into measuring cup and add water to measure 2 cps.
2 - Combine with cracked wheat, salt, basil, mint flakes and lemon peel.
3 - Heat to boiling.
4 - Cover.
5 - Reduce heat and cook 15 minutes.
6 - Chop almonds.
7 - Brown lightly in margerine, stirring continually, over moderate heat.
8 - Add to cooked cracked wheat with onion, raisins, parsley and lemon juice.
9 - Toss lightly to mix.
10 - Add turkey, chicken, or lamb and heat.
Yield: about 4 servings
