Red Flannel Hash a la Bette Davis
1 1/2 cps cooked chopped corned beef
1 1/2cps cooked chopped potatoes
2 cps cooked chopped beets
1/2 cpchopped onion
1 tbsp Worcestershire Sauce
1/2 tsp salt
1/2 tsp pepper
2 tbsp shortening
4 poached eggs
1 - In a largebowl combine corned beef, potatoes, beets, onion, Worcestershire sauce, salt and pepper.
2 - In large heavy skillet (preferably cast iron), melt shortening over medium high heat.
3 - Add corned beef mixture and cook, trurning once, until hash is crusty, about 15 minutes.
4 - Top with poached eggs.
5 - Serve with ketchup if desired.
Makes 4 servings at 415 calories each
