Zucchini and Cherry Tomatoes with Garlic
2 firm, unblemished zucchini, about 3/4 lb
3 tbsp olive oil
salt to taste (if desired)
freshly ground pepper to taste
2 large cloves garlic,unpeeled
16 cherry tomatoes
1 - Trim ends from zucchini.
2 - Quarter lengthwise and cut each quarter into 1/2-inch lengths
3 - Ther should be about 3 1/2 cps.
4 - Heat oil, and when hot, add zucchini.
5 - Sprinkle with salt and pepper.
6 - Add gartlic and cook, shaking skillet and stirring until zucchini starts to brown, about 5 minutes.
7 - Add tomatoes and continue to cook, stirring gently so tomatoes cook evenly without breaking skin.
8 - Cook about 2 minutes, just until tomatoes are heated.
9 - Do not overcook or tomatoes will break..
10 - Remove garlic and serve hot.
