Endives Braisees (Braised Endives)
1 1/4 lbs fresh Belgian endives
2 tbsp butter
Juice of half a lemon or lime
salt and freshly ground pepper to taste
1/4 tsp sugar
1 - Trimoff the ends of each endive.
2 - Place the endives on flat surface and cut on the diagonal into very thin strips.
3 - There should be about 6 cups of shredded endives.
4 - Heat butter in a heavy skillet and add endives.
5 - Add lemon juice, salt, pepper and sugar.
6 - Cook, stirring often, about 3 minutes or until wilted.
7 - Cover and cook about 8 miinutes.
8 - Uncover and continue cooking, stirring often, about 3 or 4 minutes or until lightly browned.
Yield: 4 servings
