1 lb fresh spinach, including stems
1 quart water with 1 tsp salt and 1 tbsp soy sauce (or more salt if you have no soy sauce).

1 - Drop washed and rinsed spinach leaves into boiling water in small quantities.
2 - Stir, remove from heat, cover, and after 2 minutes, plunge just wilted spinach into a large bowl of ice water
to cool it immediately.
3 - Lay out a thick layer of paper towels and remove spinach in small batches from ice water.
4 - Shake off as much water as posssible.
5 - Alternating stems toleft and right,6 to 7 inches long, 2 to 2 1/2 inches thick.
6 - Rollit into towel, pressing it gently as you would roll up a jelly roll. Chill.
7 - Before serving, carefully cut spinach roll into four equal pieces.
8 - Stand each piece on a serving platter in a row next to the chicken breasts and sprinkle cold spinach with sesame seeds.
