3 lbs potatoes
4 tbsp melted butter, divided
4 hard-cooked eggs, peeled, sliced
1 can (2 oz) anchovy fillets
1/3 cp heavy cream
1/4 cp grated Parmesan cheese
1 - Peel potatoes, steam or boil in salted water until done.
2 - Drainand toss over heat in saucepan until dry.
3 - Cut in thick slices and arrange 1/3 on bottomof a buttered casserole.
4 - Top with 1/3 of the egg slices and anchovies;sprinkle with 1/3 remaining butter.
5 - Repeat layers two more times, ending with anchovies.
6 - Pour cream over,sprinkle with pepper, cheese.
7 - Bake,uncovered at 375 degrees 20 minutes.
