Cucumber Saute II
1 large fresh cucmber
3-4 tbsp butter
salt and pepper to taste
1 tbsp fresh or dried dill
1 - Peel and seed cucumber.
2 - Cut in 1/2 inch slices.
3 - Drop into boiling salted water for 3 minutes.
4 - Heat 3 or 4 tbsp butter in large saute pan.
5 - Add parboiled cucmber slices.
6 - Toss over heat.
7 - Add salt and pepper to taste and 1 tbsp fresh or dried dill.
Serve as a side vegetable with fish.
