5 tbsp butter
1 cp sliced onions
2 tsp curry powder
4 hard-cooked eggs
4 tomatoes cut in thick slices
salt and pepper
3 tbsp grated Parmesan cheese
1 cp medium cream sauce
2 cps cooked rice
1/2 cp cream
1 - Melt butter and cook onions until soft.
2 - Stir in curry powder.
3 - Push onions to side.
4 - Cut eggs into thick slices and brown them in the center of the pan with onions.
5 - Arrange tomato slices in greased individual casseroles.
6 - Sprinbkle with salt, pepper, and grated cheese.
7 - Top with sauteed egg slices and onions.
8 - Now spoon omn cream sauce.
9 - Add equal portions of rice to each casserole and moisten with cream.
10 - Cover andd bake in moderate oven until steaming hot.
11 - If the casseroles do not have covers, use aluminum foil.
12 - For a late Sunday morning breakfast.
