Sunday Supper Casserole Recipe
6 hard-cooked eggs
3 peeled tomatoes, not too ripe
4 tbsp butter
4 tbsp flour
1 1/2 cps milk
2 tsp slt
1/2 cp grated cheese
1 tbsp shredded pimentos
1/4 cp buttered cracker crumbs
1 - Cut eggs into halves and arrange them as a border in a buttered medium casserole.
2 - Peel tomatoes by spearing withg a fork and holding over flame until skin blisters.
3 - Cut them into thick slices nd pile in center of casserole.
4 - Make sauce on top of stove:Melt butter, blend in flour, slowly stir in milk and salt.
5 - Cook for a few minutes over low flame until sauce begins to thicken.
6 - Remove from heat, add cheese and let it melt.
7 - Pour into casserole, top with pimentos and crumbs.
8 - Bake 20 minutes.
9 - For a complete supper, serve with cooked rice.
